2/3 c. Minute Rice
2 3/4 c. milk
1/3 c. sugar
1/2 tsp. salt
2 eggs, slightly beaten
1 tsp. vanilla
1/4 tsp. nutmeg

Directions:
Directions:
Mix rice, milk, sugar and salt in a sauce pan. Bring to a boil over medium heat. Simmer uncovered for 10 minutes - stir occasionally. Mix eggs, vanilla and nutmeg in casserole dish. Slowly stir in rice mixture. Set in shallow pan - pour 1" of very hot tap water into pan. Bake at 375 F for 20-30 minutes or until edges are lightly brown and center is set. Cool 1 hour before serving.
