1 whole chicken, cut into 8 pieces 1/2 cup plus 2 TBS olive oil 10 sprigs of fresh thyme 40 peeled cloves of garlic Salt & pepper
Preheat oven to 350ºF. Season chicken with salt and pepper. Toss with 2 TBS olive oil and brown on both sides in 1/2 cup oil. Use very high heat and a cast iron skillet.with a heavy lid or a Le Creuset pan. Chicken should be at room temp. and dry. Brown quickly. Add thyme and garlic cloves. Cover pan with lid and bake 1 1/2 hours. Let rest 15 minutes. before serving.
