2 c. split peas
6 c. water
1 medium onion, chopped
2 cloves garlic, crushed or pressed
2 carrots, sliced or diced
2 stalks celery, sliced
1 potato, scrubbed and diced
1/2 t. dried oregano
1/2 t. dried basil
1/4 t. ground cumin
1/4 t. black pepper
1/2 t. salt

Directions:
Directions:
Rinse split peas, then place in a large pot with remaining ingredients except salt. Bring to a simmer, cover loosely and cook until the peas are tender, about 1 hour. Mash with potato masher in the pot or puree in blender when cooked.
