2 eggs
2 tbsps. veg. oil
2 tbsps. vinegar or lemon juice (secret ingr. 1)
2 c. flour
2 tsp. baking powder
3 tbsps. sugar
1/2 tsp. salt
2 tsp. soda (secret ingr. 2)

Directions:

Mix wet and dry ingredients in separate bowls. When griddle is hot mix ingredients together and stir until just mixed (don't overmix and beat out the bubbles). Pour 1/4 c. batter per pancake onto a hot griddle (400), cook until bubbles form then turn. Melted margarine can be used instead of oil. Buttermilk can be substituted for half the milk in which case reduce the vinegar to 1 tbsp..

This is a basic pancake recipe to which I added the secret ingredients to make them lighter and fluffier. The batter will go flat in a short time so it is necessary to cook the entire batch and freeze the unused cakes rather than trying to keep the batter for later.
