6 ounces Feta cheese
2 roma tomatoes
2 T. extra virgin olive oil
2 t. finely chopped fresh oregano or 1 t. dried
freshly ground black pepper

Accompaniment: whole wheat pita toasts

Directions:
Directions:
Preheat broiler. Crumble enough Feta to measure 1 cup and spread evenly in a shallow 2 cup baking dish (9 X 6 X 1, roughly). Thinly slice tomatoes crosswise and arrange overlapping, if necessary, on feta. Drizzle oil over tomatoes and sprinkle with oregano and pepper. Broil 2-3" from heat until cheese is bubbling, 5-8 minutes.

Serve with pita toasts. Serves 4 as an appetizer.
