4 oz. salmon filet, 3/4" think
1/2 avocado, pitted and sliced
1/4 cucumber, cut into spears
1/2 cup grape tomatoes, halved
1/2 cup frisee lettuce
2 TBS lemon juice
2 tsp olive oil
Salt and pepper to taste

Directions:
Preheat oven to 425F. Spray a roasting pan with cooking spray. Salt and pepper the salmon. Bake salmon for 10-12 minutes. Cool. Break salmon into large chucks. Arrange all the ingredients in a martini glass, starting with the lettuce and salmon. Avocado and cucumber spears should be placed vertically. Drizzle with lemon and olive oil. Chill until ready to serve.
