17 oz. light corn syrup
11 oz. sugar
5 tbsp. butter
8 oz. whipping cream
1/8 tsp. salt
10.5 oz. evaporated milk
1 lb. pecans

Directions:
Lightly grease a cookie sheet with butter and cover with pecans. In a 4-quart sauce pan, mix the corn syrup, sugar, butter, whipping cream, salt and 2 oz of evaporated milk. Bring to a boil, stirring constantly to 230º. Slowly add 8-1/2 oz. evaporated milk, so it does not stop boiling, stirring constantly. Take temperature to 236º.

Pour the hot caramel through a funnel over the pecans to form the turtle shaped candy. Recover and save the extra pecans that don't get covered.

Once the caramels are cool, use 1 package of Ghirardelli milk chocolate morsels and microwave until melted. Dip the turtles in the chocolate and lay on a sheet of wax paper. If chocolate doesn't harden, you may need to refrigerate for a bit.

This is a recipe from Grampa Bob, the candy maker! These are better than Fannie May turtles. Old Boy makes his own chocolate, but it's way too complicated so we buy our own. You will need a candy thermometer.
