3 lb. boneless chicken breast
1/2 C. flour
1/4 C. olive oil
3 C. chopped onion + 3 Tbsp,. chopped garlic
1 1/2 C chopped Anaheim chilies ( 4-5 chilies)
2 green bell peppers, slivered
5 C. frozen corn (2 pkgs.)
6 C. low fat chicken broth
12 tomatillos, chopped
2 Tbsp. fresh oregano+ 2 T chili powder +1 T cumin
1 tsp.paprika, 2 cinnamon sticks
1 C. chopped cilantro, 1 bag tortilla chips

Directions:

Cut up chicken in to 1/2 in. pieces, salt/pepper, coat with flour, then sauté in olive oil until browned.

Place cooked chicken in 3 qt. pot.

Sauté onions, garlic, chilies, peppers, corn, add to pot.

Add broth, tomatillos, oregano, chili powder, cumin, paprika, cinnamon sticks.

Heat to light boil, then simmer 2 hrs.

Remove cinnamon sticks. Toss cilantro on top.
