2 c. sugar
1 c. cider vinegar
1 Tbsp coriander seed
3 2" cinnamon sticks
1 small piece ginger root
2 lbs ripe but firm pears, pealed, halved and stoned

Directions:
Directions:
In a large enamel saucepan combine 1st 5 ingredients. Bring to a boil over low heat and simmer for 5 minutes. Drop pears, a few at a time, into the syrup and simmer 10 or 15 minutes or until tender. Transfer fruit to glass bowl and pour syrup over it. Let fruit cool and chill it covered. Keeps for at least 2 months in refrigerator. Makes about 1 quart.
