Ingredients:  
1/4 c. butter
1 1/2 c. thinly sliced onion
3 tbsp. flour
3 c. cubed potatoes
4 c. milk
1 tsp. salt
1/4 tsp. pepper
2 c. shredded cheddar or Velveeta
8 oz. browned sliced Polish sausage, slice into 1/4" slices, then brown

Directions:
Directions:
In a large pot, brown sliced sausage. Add butter and melt. Stir in onion and cook over medium heat until tender. Stir in flour until smooth and bubbly. Stir in potatoes, milk, salt and pepper. Cover and continue cooking, stirring occasionally, until potatoes are fork tender. Stir in cheese and cook until cheese is melted.
