6 Boneless, skinless chicken breasts, grilled (see note)
1 red pepper, roasted, sliced
1 yellow pepper, roasted, sliced
Roasted almonds
6 -12 goat cheese medallions (coated with roasted almonds)

Sauce:
1 t shallots + 1 t garlic - saute in olive oil
add c dry white wine reduce
add 2 T fresh rosemary
add c butter (use less then this amount)

1. Preheat oven to 350.
2.. On top of each chicken breast, lay red and yellow pepper strips. Add 1-2 goat cheese medallion coated with toasted almonds.
3.. Heat 5-10 minutes until cheese softens.
4. While chicken is heating, make suace.
5. Pour sauce over chicken. Pass reserve (I add to rice)

The sauce is delicious and I usually double to add some to the rice I serve with it. You can put the chicken on a bed or rice or serve along side. Also, put any extra goat cheese medallions on the table with some good bread!
