2 t. vanilla, divided
6 to 8 sweet potatoes, cooked and mashed
1 c.packed brown sugar
1 t. pumpkin pie spice
pecans to tast
large white or colored marshmallows
4 egg whites
3 T. granulated sugar

Directions:
Directions:
Combine 1 t. vanilla and next 4 ingredients in a large saucepan. Cook over low heat for about 5 minutes. Cool. Pour into a greased 9 x 13 baking dish. Decorate with marshmallows, placing them about 1 inch apart. Beat egg whites until soft peaks form. Blend in granulated sugar and remaining 1 t. vanilla. Pour over marshmallows to cover. Bake at 350 for 10 minutes or until golden brown.
