Ingredients:  
1 can of black eyed peas, drained
1 can of shoe peg corn (drained)
2 large home grown tomatoes, finely chopped
bell pepper, finely chopped
4 scallions, finely chopped
2 cloves of garlic, finely chopped
cup chopped parsley
2 Tbsp vinegar
1 cup picante sauce (your pick hot or mild)
Pinch of sugar

Mix together. Chill. Drain before serving. If you like it hot, add diced jalapenos. Drain off any excess liquid that forms on top. Low fat!
