2 tsp canola oil
1 onion, chopped
1 (10 oz) pkg spinach thawed and drained well
1 cups grated lite cheddar cheese
6 large egg whites
1 large egg
1/3 cup no fat cottage cheese
1/8 tsp salt
tsp nutmeg

Directions:
Directions:
Preheat oven to 375. Grease pie plate. Cook onions in oil for 5 minutes. Add spinach and stir until moisture evaporates. Combine all the ingredients and pour into pie plate. (The actual recipe called for layering the ingredients but I mixed them all together.)

Bake 30-40 minutes
