3 eggs.
2 c. sugar
1 c. oil
1 T. vanilla
2 c. grated zucchini (or use a chopper small pieces)
3 c. flour
1 T. cinnamon
2 t. baking soda
t. baking powder
1 t. salt
c. nuts (optional)

Directions:
Directions:
Mix eggs and sugar together well, add oil, vanilla and zucchini. Mix well. Add dry ingredients. Bake for about 1 hour at 350 in greased bread pans.
