2 large oranges, peeled and sectioned
1 1/2 c. orange juice
2 tbsp. dry white wine
2 tbsp. corn starch
2 tbsp. chopped fresh cilantro
2 tbsp. cornmeal
1/2 tsp. salt
1/4 tsp. pepper
4 pieces mahi-mahi (1/2 in. thick, 6 oz. each)
4 tsp. olive oil

Directions:

Whisk orange juice, wine and cornstarch in pan. Bring to a boil over medium high heat and cook, stirring until sauce boils and thickens, about 2 minutes. Remove from heat and stir in orange sections. Keep warm. Mix cilantro, cornmeal, salt and pepper in pie plate. Coat fish, pressing firmly. Heat 2 tsp. oil in skillet over medium high heat until hot. Sear mahi-mahi 2 to 3 minutes on each side. Add remaining oil just before turning fish. Serve with the sauce.
