"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

Ingredients:
1 stick butter, softened
1 cup flour
1 large cream cheese, softened
Preserves
powdered sugar, sifted

Directions:
In medium mixing bowl cream together butter and cream cheese, gradually add flour mixing well with mixer. Refrigerate overnight.

On floured surface roll out thin, about 1/4 inch. Cut into squares (approx. 2 inches). Add 1/2 tsp. preserves to each square. Fold over two corners, pinch with fingers to seal tightly. Place on cookie sheet.

Bake 325 until lightly browned. You will need to check on pastry while baking, if they start to come unsealed, remove from oven and press back together with a knife. Remove from oven and sprinkle with powdered sugar while hot.

I use a variety of preserves.
