plum tomatoes , halved lengthwise ( or cherry tomatoes cut in half)
olive oil
thyme
coarse salt and pepper

Directions:
Directions:
Preheat oven to 325. place tomatoes on a rimmed baking sheet, cut side up. Drizzle with oil, and sprinkle with thyme; season with salt and pepper. Roast until tomatoes begin to collapse, brushing occasionally with pan juices, about 90 min. Or you can place them in the oven at a lower temp. and cook till they become shriveled and delicious!
