4 - four oz. mahi mahi (or other) boneless, skinless fish filets (cut thin)
1 cup buttermilk
2 egg whites
4 cups rice chex cereal
2 T. sesame seeds
No stick pan spray

Directions:
Directions:
Beat the buttermilk and egg whites together in a mixing bowl. Grind the rice chex and sesame seeds in a food processor, then put in a separate bowl. Dip the fish filets into the milk mixture, then the crumb mixture. Spray with no stick spray and bake at 375 until cooked through and crisped (approx. 12 min). Serve with ginger sauce.
