1/2 c cooked crabmeat
48 canape shells
1 tbsp butter
2 tbsp flour
2 tbsp parmesan cheese
1 egg yolk
2 tbsp dry sherry
1/2 tsp salt
Freshly ground black pepper
3/4 c light cream

Directions:
Directions:
Melt butter over low heat. Add flour and stir until smooth. Add cheese and cream and cook until thickened stirring constantly. Remove from heat. Stir in crab meat, salt and pepper. Beat egg yolk with sherry and add to crab meat mixture. spoon into shells and broil under medium heat for 3 minutes or until brown on top.
