4 whole boneless, skinless, chicken breasts
1 1/4 c Santa Fe Breading, (see below)
8 slices cheddar cheese
1/2 c salsa
1/4 c sour cream
1/4 c guacamole
1/4 c vegetable oil

Santa Fe Breading;
10 oz. tortilla chips
2 tsp ground coriander
2 tsp ground cumin

Directions:
Directions:
For the breading, crush the tortilla chips in a plastic bag and then in the food processor. Add the cumin and coriander and pulse in the processor until the crumbs are evenly crushed. Place the breading in a shallow baking pan and press the crumbs firmly onto both sides of the chicken breast. Heat the oil in a large saute pan. When the oil is hot, add the chicken breasts and brown on both sides. Lower the heat and continue to cook the chicken, turning as needed, until it is done. Place 2 tablespoons of salsa on each sautéed chicken breast and then top with 2 slices of cheese. Continue to cook the chicken until the cheese is melted. Place the chicken breasts on a serving platter. Top each with 1 tablespoon of sour cream and then 1 tablespoon of guacamole.©
