1 c. giblets
1 large onion chopped
1 c. diced celery
2 c cooked cornbread
3 hard boiled eggs chopped
1 clove garlic chopped fine
1/4 c. green pepper chopped
1/4 c. green onions chopped
1 tsp sage
salt & pepper

Directions:
Directions:
Boil 1 cup giblets til tender. Reserve broth. Chop giblets fine and fry with 1 large onion chopped and 1 c. diced celery. Add broth and mix with 2 c. cooked cornbread. add 3 hard boiled eggs chopped, 1 clove garlic finely chopped, 1/4 c. green pepper and 1/4 c. green onions, 1 tsp sage, salt and pepper to taste. Bake 1 hour in a slow to medium oven.
