1 onion, diced
1 cup rice
4 garlic cloves, diced
2 TBS oil
1 tsp cumin
1 tsp oregano
2 cups chicken broth
1/2 cup sherry or white wine
Stuffed green olives
Salt & pepper
10 oz. salsa verde or a tomatillo sauce
Four pieces of chicken
1/4-1/2 cup each of sour cream and jack/colby cheese

Directions:
Directions:
Brown rice & onion in oil until rice turns white. Add garlic, cumin & oregano. Add sherry and reduce liquid by half. You can transfer rice mixture to clay baking dish or use large sauce pan. Add heated broth, green olives. Place chicken on top of rice and pour salsa over chicken. Cook until rice & chicken are done. About 45 minutes to 1 hour at 450F in the clay dish. Then add the sour cream and cheese and serve.
