2 c. flour 2 t. baking soda 1 1/2 t. baking soda 2 t. cinnamon 1 1/2 c. sugar 1 c. cooking oil 3 eggs 1 t. vanilla 1 c. raisins 2 c. fresh or canned mangos, chopped
Mix together flour, baking soda, salt, cinnamon, and sugar. Add oil, eggs, vanilla, mangos, and raisins. Bake at 350º for about an hour in a greased 9x5x3 greased loaf pan. If you make a double recipe, use only 1 c. oil. Place foil over loaf if it browns too quickly.
