6 eggs, slightly beaten
1 lb. potatoes, peeled and cubed
chopped ham or sausage (optional)
4 T. oil
3 T. minced onions
2 T. chopped parsley
salt and pepper to taste

Directions:
Directions:
Fry the potatoes, ham or sausage in the oil, do not brown. Fry onion until transparent and add parsley. Season with salt and pepper, Add the eggs and cook on one side. With a platter over the pan, turn the omelette onto the uncooked side and fry until golden. Slice immediately and serve as an appetizer.
