1 1/2 c. rice
1/4 c. oil
1/2 medium onion, chopped
2 garlic cloves, minced
chicken consomme to taste
2 poblano chiles, deveined and peeled
1 1/2 c. cream
1 c. Monterrey Jack cheese of Manchego, grated

Directions:
Directions:
Brown rice in oil with onion and garlic. Add water and chicken consommé. Boil until all water is consumed. When cooked, place in an ovenproof baking dish. In blender, mix chiles, cream, and consommé. Pour sauce over rice and sprinkle cheese on top. Bake at 400º until cheese melts.
