6 cups light cream
12 egg yolks
2 Tbsp sugar
3 Tbsp vanilla extract
1/2 cup brown sugar

Directions:
Directions:
Put the cream in the top of a large double boiler or in a bowl over a pan of gently simmering water. Carefully stir the egg yolks, beaten with the sugar and vanilla extract, into the warm cream. Continue cooking gently until the cream has thickened enough to coat the back of a wooden spoon. Strain the cream through a fine sieve into a large souffle dish or mold and chill for a last 4 hours. Sprinkle a 1/4 inch-thick layer of sifted brown sugar over the chilled cream. Set the dish or mold on a bed of ice cubes or the broiler until the sugar has caramelized. Let the mixture cool, then chill it in the refrigerator for 2-3 hours
