1 - 3 1/2 lb. chicken, cut up
seasoned salt and freshly ground pepper
4 links Italian sausage, diced
2 Tablespoons butter
2 Tablespoons Italian olive oil
1 small yellow lemon, finely chopped
4 cloves garlic, chopped
2 cups raw rice
3 cups boiling chicken stock
3 to 4 ripe tomatoes, peeled, seeded and chopped
1/2 lb. fresh mushrooms, sliced
1 Tablespoon chopped fresh parsley

Directions:
Directions:
Season chicken with salt and pepper and brown chicken and sausage in butter and oil. Pour out excess grease. Add the onion, stirring. After 4 minutes, add the garlic, stirring occasionally. Add the rice, still stirring and cook until translucent. Add the boiling stock and cover; simmer for 15 min. Place this mixture in a buttered casserole (or spray with Pam,) add the tomatoes and toss well. Bake in preheated 375 oven for 25-30 minutes, or until the rice is cooked. Stir in the mushrooms and parsley and serve. (The mushrooms will cook from the steam of the rice).
