2 cups balsamic vinegar
1 cup water
1 pound fresh or frozen organic strawberries
1 teaspoon horseradish

1 pound salmon, cut into 4 equal portions
2 cups spinach, cleaned
2 tablespoons minced garlic
Pinch salt
Pinch pepper

Directions:
Directions:
1. Combine vinegar, water and strawberries in a medium saucepan. Cook over medium-high heat for 20 minutes or until thick. Sauce will have reduced to 1/3 of the original volume. Add horseradish and mix well.

2. Preheat over to 400║.

3. Lightly coat a large sautÚ pan with canola oil. SautÚ garlic in a pan until it begins to turn golden brown. Add spinach and sautÚ, moving spinach around in pan until wilted. Remove from heat.

4. Place salmon between 2 pieces of wax paper and pound until flat, about 1/4 inch, being careful not to tear salmon. Place 2 tablespoons spinach mixture in salmon and roll up. Sear in a hot pan on all sides until golden brown. Transfer to oven and cook for 8 to 10 minutes.

5. Serve 1 stuffed salmon fillet with 1/4 cup sauce.
