4 oz. margarine
2 oz. shortening
2 cups sugar
5 egg yolks
2 cups all purpose flour
1 tspn. baking soda
1 cup buttermilk
1 tspn. vanilla extract
1 cup chopped pecans
2 cups coconut
5 egg whites

Frosting:
4 oz. cream cheese cold
5 T. butter room temp.
1 1/2 tspn. vanilla
6 cups powdered sugar

Directions:
Directions:
Cream margarine, shortening and sugar in a bow or mixer. Slowly add the egg yolks. Sift together flour and baking soda. Combine buttermilk and vanilla. Add to yolk mixture, the buttermilk and flour, alternating a little milk, then add a little flour, a little milk, then a little flour, until it is all incorporated. Mix in coconut and chopped pecans. Whip egg yolks to a soft peak, then add. Pour into 2 greased and floured 10 inch cake pans. Bake at 350 for 25 to 30 min. or until well done.

Frosting:
4 oz cream cheese - cold
5 Tablespoons butter - room temperature
1 1/2 tspn.vanilla
6 cups powdered sugar
Combine the first 3 ingredients then beat until consistency. Do not use electric mixer. Add 1/3 at a time until smooth. Add lemon zest at end and 1 cup of chopped pecans.
