Ingredients:
1 cup oatmeal
1/3 cup grated parmesan cheese
1/2 tsp. salt
1/2 tsp. paprika
1/8 tsp. pepper
2 cloves garlic, minced
1/3 cup milk
Boneless skinless chicken breasts

Directions:
Directions:
Place the oatmeal, parmesan cheese, salt, paprika and pepper in a blender for 1 minute or till thoroughly mixed. Mix the garlic and milk together in a bowl. Dip the chicken breasts in oatmeal mixture, then dip in garlic/milk mixture and again in oatmeal mixture. Arrange in shallow pan ( single layer). Drizzle top with melted butter or margarine, lightly. Bake in preheated oven at 375 for about 1 hour, uncovered (no need to turn over). Note: I use Pam sprayed in glass dish for best results. Also throw away extra milk/garlic and coating as raw chicken has been dipped in it. You can make extra coating and freeze for later.
