1 3-pound chicken or fryer parts
6 cups water, 4 cups chicken stock
1 onion finely minced, 3 carrots diced
3 stalks of celery diced, 6 parsley sprigs
1 bay leaf, 2 1/2 tsp Italian seasoning
1 C pastina (orzo or quik barley can be substituted)
2 T chopped parsley, 1/4 tsp tabasco
1/2 tsp. gnd.cumin, salt & pepper to taste
grated parmesan cheese

1. In lg. pot combine chicken, water, stock, bay leaf, parsley & Italian seasoning. Bring to a boil, reduce heat, cover & simmer stock for about 45 minutes.
2. Remove chicken from stock and let cool. Discard skin and bones. Cut into 1/2 inch pieces. Set chicken aside (If desired; stock can be refrigerated overnight and skimmed of fat)
3. Bring stock to a boil. Add onions, carrots, celery, cumin, and pastina. Simmer soup covered for 10 minutes, stirring occasionally.
4. Add the chicken pieces and tabasco, simmering and stirring for another 5 minutes.
Season & Sprinkle servings with parmesan

Mom intuitively knew the healing power of chicken soup long before science acknowledged it. She never measured amounts but added this and that; always in the right proportions. One or two bowls of this tasty and comforting soup was one of the many ways mom nourished our souls. Enjoy.
