Buckeyes (Candy) Recipe

1 lb. butter or oleo
2 lb. peanut butter
3 lb. powdered sugar
1 T. vanilla
Melt together over warm water:
1 1/2 lb. chocolate chips
3/4 cake paraffin slivered OR 1 T. vegetable oil

Directions:
Directions:
Roll peanut butter mixture into 1-inch balls. To make it easier use a small ice cream scoop (mine is from Pampered Chef).
Stick toothpick into top center.
Holding onto toothpick, dip each ball into melted chocolate. Leave area around toothpick free from chocolate, so candy looks like a buckeye.
Set on wax paper, remove toothpick, and allow chocolate to dry.

This recipe will make up to 15 doze. I usually use 2 packages or more of chocolate chips. You can use dipping chocolate, but if you do don't use the paraffin or vegetable oil.

With the left over chocolate add peanuts (or other nuts) stir to cover the nuts and drop spoonfuls onto wax paper and let dry.
