1 lb fresh green beans, washed and trimmed
1/4 medium red onion, sliced thin
1/4 European cucumber, cut into thin sticks
1/2 pint grape tomatoes, halved
Extra virgin olive oil
juice of 1/2 lemon
coarse salt
pepper

Directions:
Directions:
Steam green beans in 1/2" boiling water, covered for 3 to 4 minutes. Cold shock beans and drain well. Place in bowl with onions, cucumbers, tomato and dress with generous drizzle of olive oil and lemon juice. Season with salt and pepper.
