4 medium potatoes, quartered (about 4 cups)
2 c. baby carrots
1 stalk celery cut into 1 inch pieces
1/2 c. diced plum tomato
1 (2 1/2-pound) bonless beef chuck roast
1/2 tsp. black pepper
1 10 3/4 oz. can campbells Tomato Soup
1/2 c. warm water
1 tsp. dried basil
1 tsp. dried oregano
1 tsp. dried parsley flakes, crushed
1 tsp. vinegar

Directions:
Directions:
Place potatoes, carrots, celery and tomato into crock pot. Season roast with pepper and place on top of vegetables. In a seperate bowl mix together soup, water, basil, oregano, parsley and vinegar, pour over meat in crock pot. Cover and cook on LOW for 10 to 12 hours or on HIGH for 4 to 6 hours.
