3 tbsp olive oil
1 small onion, chopped
1 lb shrimp, peeled
1/3 c dry white wine
10 oz ripe plum tomatoes, peeled and chopped.
1 lb spaghetti
1 tbsp parsley, chopped

Directions:
Directions:
In a large pot bring 5 quart salted water to a boil. In a large frying pan, heat the olive oil over low heat. Add the onion and saute, stirring frequently until translucent, about 3 minutes. Add the shrimp, raise the heat to medium and cook, stirring constantly, for 2 minutes. Add the wine and continue cooking until it evaporates, about 2 minutes. Add the tomatoes and season to taste with salt and pepper. Cook for 2 more minutes. Meanwhile, add the spaghetti to the boiling water and cook until barely al dente. Drain the pasta and transfer it to the frying pan containing the tomato sauce. Add the parsley and cook over medium heat, stirring frequently for 2 minutes. Arrange the pasta on a warm platter and serve piping hot.
