2 tbsp shortening
2/3 c uncooked rice
1 c onion, finely chopped
4 c tomatoes
1 tsp salt
1/4 tsp pepper

Directions:
Directions:
Put shortening in skillet. When hot, add rice and stir until rice is light brown in color. Add onions and tomatoes. Season with salt and pepper. Cover. When mixture reaches steaming point, reduce heat to simmer and cook until rice is soft. If you find it necessary to stir mixture, better use a fork so you won't mash the rice. For extra flavor, add 2 tablespoons finely chopped celery.

If you add cooked hamburger you have a meal in the skillet and top with Parmesan cheese. It is very good.
