1 c rice, cooked per pkg direction
3 tbsp shortening
1/2 c onion, chopped
3/4 tsp salt
1/8 tsp pepper
1 tbsp flour
3/4 c milk
1 1/2 c cheddar cheese

Directions:
Directions:
Melt shortening, add onion and seasonings. Saute to a golden brown. Add flour. Blend through onions, then add milk, stirring until mixture has thickened. Remove from heat, add cheese, and stir until cheese has melted. Add cooked rice and blend together, using a fork so as not to mash rice. Pour into greased casserole. Bake at 350 for 30 minutes.
