1/4 c. butter
1/4 c. flour
1 tsp. salt
1/4 tsp. pepper
1 1/2 c. sour cream
4 oz. Velveeta, cubed
1 c. shredded colby cheese
8 hard boiled eggs, chopped
3 c. cubed cooked potatoes
2 c. cubed cooked ham
2 T. dried minced onions
2 T. minced parsley h

Pre heat oven to 350. In a large saucepan over medium heat, melt butter. Stir in flour, salt and pepper until smooth. Cook and stir for 1- 2 min. Remove from heat; stir in sour cream and cheese. Cook and stir on low heat just until cheese is melted. Mixture will be thick. Remove from heat. Stir in eggs, potatoes, ham, onion and parsley. Transfer to a baking dish. Bake uncovered for 30-35 min.
