3 beets
1 c. walnuts, halved

Preheat oven to 400 degrees. Wash beets under cold water scrubbing slightly. Cut off 1/8 of both ends. Fold beets snuggly in aluminum foil ooze olive oil over each beet. Cook in oven on pan (for drippings) for 1 hour. Remove from oven and let cool. Rinse beet under small stream of water and peel off skin. Cut into small pieces.

Heat small pan on burner on high. When hot add walnuts, add 3 T. sugar and 1 tsp. water. Stir and flip nuts vigorously until all water has evaporated and nuts begin to get toasted. Remove nuts from heat and put in cool bowl. Stir after sitting for three minutes. Stir once more after three more minutes.

Add cooked beets and candied walnuts to salads with slight vinegar dressing.
