1 c. frozen corn kernels 1½ avocado in chunks ½ red onion, diced small ½ red pepper, diced small 2 T. olive oil 1 T. red wine vinegar 1 garlic clove, minced 2 drops Tabasco, or to taste 1 tsp. ground cumin ½ tsp chili powder 1 T. oregano Juice from 2 limes Salt and Pepper to taste
Mix all ingredients. Can be refrigerated for up to three days. Serve with pita chips.
