1 head Romaine lettuce
2 red Delicious apples, cut into chunks or Granny Smith
4 oz. Gorgonzola cheese, crumbled (or Bleu cheese)
c. coarsely chopped walnuts, lightly toasted

Dressing
2 tsp. Dijon mustard
2 cloves garlic, minced
1/4 C. white wine vinegar
1/4 tsp. salt
1/4 tsp. pepper
1/3 c. olive oil
