32 oz of fresh kraut, rinsed and drained
4 chicken breast
dash, salt and pepper
8 oz shredded provolone or Italian cheese mix
1/2 Cup Russian Dressing

Directions:
Directions:
Preheat oven to 350
Spray casserole or baking dish with nonstick cooking spray. Put a layer of kraut on bottom of dish. Next lay in chicken breast; sprinkle with salt and pepper. Spread another layer of sauerkraut over top of chicken. Drizzle Russian dressing over top layer of sauerkraut. Cover dish with foil and bake for approximately 45 minutes until chicken is tender. Remove foil cover and spread shredded cheese overall and return to oven until cheese is melted, approximately 5 minutes. Serve with a hearty bread roll.

My mother, Ida McMillan loved to cook with sauerkraut and this is a recipe from her collection. I found it is quick and simple. I use the frozen chicken breast when I make it.
