Special Sauce-1/4 cup granulated sugar
½ cup water
2 tbs. Soy sauce
2 tbs. Rice vinegar
2 tbs. Ketchup
2 tbs. Lemon juice
1/8 tsp. Sesame oil
3 Tbs. Vegetable oil
2 Skinless chicken breast fillets (or ½ lb. Ground chicken)
1 cup minced water chestnuts
2/3 cup canned straw mushrooms or 4 oz. fresh mushrooms, chopped
3 Tbs. chopped green onion
1 clove minced garlic
Stir fry sauce
4 Tbs. Soy sauce
4 Tbs. dark brown sugar
1/2 tsp. rice vinegar
1 tsp. minced ginger
1 cup fried rice sticks (rice noodles fried according to package) Maifun
4 to 5 sliced iceberg lettuce cups -(i used romaine cause i like it better and it was great!)

1. Make the special sauce (for spooning over your lettuce wraps) by dissolving the ¼ sugar in water. Add rest of ingredients, mix well and refrigerate until your ready to serve the lettuce wraps.

2. To prepare the filling, grind chicken in food processor (if not using pre ground). Bring 2 Tbs. of oil to high heat in a wok or large frying pan. Sauté the chicken, garlic, water chestnuts, onions and mushrooms to the pan, sauté until chicken is almost cooked through (will happen fast) and then add stir fry sauce. Cook until chicken is no longer pink. Taste and add more soy, sugar or vinegar to taste. Spoon over bed of fried rice sticks.

3. Assemble lettuce wraps by spooning filling into a lettuce cup, adding special sauce over the top.
