3 c. hot water
1 c. milk
1/4 c. butter
1 tbsp. yellow mustard
1 box roasted garlic mashed potatoes (2 packages)
1 (6 oz.) package sliced corned beef, cut into 1/2" pieces
1 can sauerkraut, rinsed well and drained
2 c. shredded Swiss cheese (8 oz.)
1 tsp. caraway seed

Heat oven to 350 F. Grease 8x8" baking dish. Heat water, milk and butter to a rapid boil in saucepan. Remove from heat. Stir in mustard. Stir in 2 pouches of potatoes and seasoning just until moistened. Let stand about 1 minute or until liquid is absorbed. Spread 1/2 of the potatoes in baking dish. Top with corned beef. Spread sauerkraut over corned beef. Spoon remaining potatoes over top. Sprinkle potatoes with cheese and caraway seed. Bake uncovered about 20 minutes or until cheese is golden brown.
