36 Ritz crackers crushed
1 uncooked pie crust
2 c. sugar
2 tsp. cream of tartar
2 tbsp. lemon juice
2 tbsp. butter cut into cubes
1/2 tsp. cinnamon
1 3/4 c. water
grated lemon peel

Preheat oven to 425

Put cracker crumbs into crust.

Mix sugar & cream of tartar in med. saucepan. Slowly stir in 1 3/4 c. water until well blended. Bring to a boil on high heat. Reduce heat to low; simmer 15 minutes. Add lemon peel, juice, mix and let cool. Pour sugar over cracker crumbs. Drop cubes of butter over mix and sprinkle with cinnamon. Bake for 30-35 minutes.
