1 lb. chicken breasts
2 c. brown rice
1 green bell pepper
1 red bell pepper
1 can of corn
2 cans of chicken broth
tortilla chips
sour cream

Directions:
Directions:
Bake chicken breasts at 350 F for 45 minutes. Cut peppers into small pieces and saute in a large sauce pan. Add broth, corn, rice and shredded chicken (shred chicken into small pieces after baking). Cover and simmer until rice is done and liquid is absorbed, approximately 25 minutes. Serve in bowls with a dollop of sour cream on top. Use tortilla chips to scoop and eat.
