2 1/2 lbs. fingerling potatoes unpeeled
1 T. plus 1 tspn. kosher salt
1/2 t. freshly ground pepper
3 T. extra virgin olive oil

Directions:
Directions:
Rinse the potatoes and put them in a large saucepan. Cover them with cold water, add 1 T. of salt, and bring to a boil. Simmer uncovered for 15-20 min. until they are just tender. Drain the potatoes in a colander and place a kitchen towel on top, allowing them to steam for 5- 10 minutes. As son as they are cool enough to handle, cut each potato in half lenghtwise. Place the potatoes in a bowl wit 1 stun. salt and the pepper. Drizzle with the olive oil. Toss well and serve immediately.
