8 four- ounce beef tenderloins
6 T. crumbled blue cheese
1 T. blackening seasoning
4 t. olive oil
2 cups beef stock
4 T. balsmic vinegar
6 T. blackberry jam

Directions:
Directions:
Cut a pocket in each steak. Stuff with the blue cheese. Dust with blackening seasoning. Pan sear in oil. Deglaze pan with stock, vinegar and jam to saucelike consistency.
