2 lb. fresh asparagus
1/2 c. olive oil
1/8 c. balsamic vinegar
1 tbsp. Dijon mustard
1 red pepper roasted, peeled and cut into strips
salt and pepper

Directions:
Directions:
Bring pot of water to boil, add asparagus and cook for 2 minutes. Drain and rinse with cold water. Add red pepper to asparagus. Make vinaigrette. Mix oil, vinegar, mustard and salt and pepper to taste. Pour over asparagus and pepper in a serving dish.
